Here are 3 Reasons to eat more Red Beets:
– rich in Vitamin C to fight against colds
– aids in prevention of cardiovascular disease and cleanses the liver
– beet juice reduces high blood pressure
This soup is delicious and easy to make which makes it a family favorite at my house.
All you need is:
- 2 stalks of celery with leaves
- 2 beets top removed skin on
- 2 beet green stalks
- 1 bunch cilantro with stems
- 1 medium lime
- 2 cloves garlic
- 1 dash cayenne pepper
- 2 tablespoons olive oil
- 4 cups filtered water
All you do is:
- Chop all veggies into medium size country style pieces
- In a pot over medium heat, sauté garlic in olive oil
- Add celery and stir until the color brightens
- Add beets, greens, cilantro, lime juice, cayenne pepper and filtered water
- Simmer on low heat for 30 minutes and serve and
- Enjoy!
