Cleansing Beet Soup

Here are 3 Reasons to eat more Red Beets:

– rich in Vitamin C to fight against colds

– aids in prevention of cardiovascular disease and cleanses the liver

– beet juice reduces high blood pressure

 This soup is delicious and easy to make which makes it a family favorite at my house.

All you need is:

  • 2 stalks of celery with leaves
  • 2 beets top removed skin on
  • 2 beet green stalks
  • 1 bunch cilantro with stems
  • 1 medium lime
  • 2 cloves garlic
  • 1 dash cayenne pepper
  • 2 tablespoons olive oil
  • 4 cups filtered water

All you do is:

  1.  Chop all veggies into medium size country style pieces
  2.  In a pot over medium heat, sauté garlic in olive oil
  3.  Add celery and stir until the color brightens
  4.  Add beets, greens, cilantro, lime juice, cayenne pepper and filtered water
  5. Simmer on low heat for 30 minutes and serve and
  6. Enjoy!
